Wij wensen u vele jaren kookplezier met uw THE WINDMILL PREMIUM®
gietijzeren kookgerei!

GENERAL INSTRUCTIONS FOR CAST IRON
Congratulations on the purchase of your THE WINDMILL PREMIUM® pan! By rst reading the user
instructions below, you will be able to optimally enjoy your product.
Before rst use
Wash the pan in warm soapy water, then rinse and dry thoroughly. Your pan is now ready for use.
Cast iron cookware from THE WINDMILL PREMIUM® is suitable for all heat sources, including gas, electric or
halogen hobs, ceramic hobs, induction hobs and ovens that work on gas, oil, coal or wood.
Never slide the pan on heat sources with a glass surface. This can damage both the bottom of the pan and the
glass. Always lift it before moving it.
Always adjust the bottom of the pan to the surface of the heat source to use the heat as efciently as possible and
to prevent overheating of the side of the pan or damage to the handles.
Gas ames must always be limited to the base and NEVER spread along the side edges of the pan.
Long handles must be turned so that they do not protrude over the front of the stove or are positioned over other
heat zones.
Use in the oven
Products with fully cast iron handles or stainless steel lid knob can be used at any oven temperature.
To prevent damage and overheating, never place your cast-iron cookware on the bottom of an oven. It is best to
place the cookware above the bottom on a rack.
SATINISED BLACK ENAMEL
Satinised black enamel is specially designed for cooking with a higher “surface” temperature, which is not the
same as putting a pan on a hotter re. Higher surface temperatures can be achieved with cast iron, because each
part can heat evenly over medium heat. That is why the satin black interior is ideal for baking, grilling and searing.
The best results are achieved on medium and low res where the heat can be reduced as soon as the right
temperature of the surface or of the oil or fat is reached. High temperatures will cause overheating and frying,
especially with delicate egg mixtures.
In the case of satinised black enamel, a ‘patina’ (a brown-black layer) will become visible with regular use. A patina
is the result of the natural oils and fats from foods that stick to the hot surface when baking. The patina does not
have to be removed, because it ensures better results and the food is released more easily. Thanks to the patina,
the surface also needs less greasing.
Cooking tips for grilling
For proper grilling and searing, it is important that the baking surface is hot enough before you start baking. Place
the empty pan over a medium heat and let it heat up for several minutes. Do not put oil in the cold pan, otherwise
the oil may become too hot when the pan heats up and starts to smoke. Wet your ngers a little with water and
sprinkle a few drops onthe hot surface. If the water hisses and evaporates almost immediately, the pan is hot
enough and ready for use. If not, allow the pan to heat up a little longer and repeat the water test again. If the
surface is hot enough, lightly grease it with an oil spray or apply some oil with a silicone baking brush. Vegetable
oil or corn oil is recommended. Olive oil can cause a lot of smoke, but it is also safe to use.
Cooking tips for fruit and sautéing
When frying and sautéing, the fat must be heated before the food is added, so bring the pan and fat/oil to the right
temperature. The oil that covers the surface is hot enough when a small ripple occurs. In the case of butter and
other fats, wait until bubbles or foam appear.
Recommended kitchen utensils
For ease of use and protection of the surface, silicon kitchen utensils are recommended. Wooden or plastic utensils
may also be used.
Metal utensils, spoons or whisks may only be used very carefully and should not be scraped over the enamel
surface. Do not tap the utensils on the side of the pan.
